Is there a way to measure color change/difference numerically?

Q. I am doing a study one hair color change using Hydrogen Peroxide and a specific rare fungus. I need some data to run through T-Tests so what could I use to measure this numerically?

Not sure how you would go about it but
colours on screen can be given by 3 numbers the RGB....Red Green Blue...differing integers up to 256 for a lot of programs....e.g. in Java you can define a colour in this method...
You could match the colour you see by the colour you create..excel and html use RGB or hexadecimal code,which is a 16 base number to generate colours... a small point Colour is spelt color in programs usually..do a search in google..
One point to note about matching colours screen colours depend on your monitor and these vary a lot...It has been that graphic artists used the most expensive CRTs to do the best accurate colours but that was over 5 years ago..Not sure now...scanned hair or fungus are subject to errors in rendition and errors in processing...but the match to the two after scanning might be more accurate as the two created colour and scanned colour do appear on the same monitor.This might depend on the quality of your scanner and software....A good OCR software if you go down this path be a must...as well as good quality scanner...but then they have improved a lot...
Depends on your budget and what facilities you already have.....

You could devise a program to match a colour....I'm rusty..could be a scanned item might give you its colour code with only a little manipulation..One might be able to form a program to automatically compare colours but you could obviously do it manually...A lot of programs give a colour palette html

My hair is already red but not as intense as hers. I go to Sally's & all of their colors go by letters & numbers. So what can I use without bleaching/damaging my hair?

I read somewhere that her hair dye is called "Rock N Roll" and it's by Manic Panic. Ariana herself says that to keep the color intense for the show, she must get her hair done every second week , which she says always takes very long. Ari also advised against bleaching!
If you don't want to bleach and still have something nice and bright, try a henna treatment to intensify your hair color. I think they have a lot of reds. And henna doesn't damage! :D
